Fish burger with a norwegian touch

I have good memories of Norway, and my live has been connected with it in some ways, when I moved for first time to Spain I lived with a norwegian family for one year in Valencia, I met a good friends from there, and also I won a trip around this country, from Oslo to Bodø. Yep, I know Norway more than my country.

Some people say that norwegian cuisine is boring, maybe is because they haven't tried authentic food, that's why I like to eat home food, I had the chance to do it, and the tasty experience was unforgettable.

I decided to make a burger that reminds me Norway, and I think this recipe is an example of that. This recipe is a combination of sensations and flavors, the pollock fish will be made as crunchy as possible but keeping the soft texture inside it , and the mousse will be the cold and soft complement.

Breaded fish burger with salmon mousse
for 2 people

/////Breaded fish and burger ingredients:
-1 Teaspoon paprika
-1 Teaspoon oregano
-1 salt (to taste)
-1 cup chopped peanuts (chopped in a mortar)
-1 tablespoon breadcrumbs
-200grs pollock fish (or halibut or hake) cut
-Olive oil
-Burger bread
-Avocado
-Carrot
-Red onion

Procedure:
Mix all the spices and the peanut in a bowl, dip the fish into the mixture and roll it.
fry them in a hot pan with a tablespoon of oil and seal them in all the sides for 3-4 minutes, and that's all.


/////Salmon mousse:
- 300 grams smoked salmon
- 125 grams meierismør (its 100% butter from cow, no oils from plants)
- 5 dl sour cream
- 125 grams lodderogn/ cod roe
- Salt and pepper to taste

How to do it:
Put the smoked salmon in the food processor and blend until smooth. Then add the soft or melted butter, sour cream and salt and pepper. A little salt will do since the roe and the salmon is salt as it is, maybe you wont need any salt at all. When its all a smoothe mix, add the cod roe and mix slowly and carefully with a spoon or something to not break the roe. Cover up and refrigerate overnight in a form that gives it the shape you want. Because it contains a lot of fat, it will be firm after a while in the fridge.

Finally, build the burger adding over the fish a red onion with carrot, avocado strips and the mousse.

Catalonian "rossejat" noodles and peanut crispy fish


Living in Catalonia (Spain) has been the best place to experiment all kind of mediterranean food, Noodles (or fideus in catalan) were invented by Italians, but catalans adapted perfectly with their cuisine.
In catalan, "rossejat" means toasted, and I was told this recipe is from the south of Catalonia,
I'm gonna improvise this dish, add a little changes in the easy way of course but im sure catalan people wont be offended. And the breaded fish will be tasty and crunchy complement for this mediterranean recipe.

Catalonian toasted noodles and peanut breaded fish
for 2-3 people

Breaded fish ingredients
-1 Teaspoon paprika
-1 Teaspoon oregano
-1 salt (to taste)
-1 cup chopped peanuts (chopped in a mortar)
-1 tablespoon breadcrumbs
-100grs white fish (like halibut or hake)
-Olive oil

Rossejat ingredients
-1 cup Fish stock
-1 ripe tomatoe chopped
-1 garlic clove chopped
-1 cup noddles
-6 prawns cleaned
-2 Tbspoon olive oil

Let's start with the noddles...

Heat the oil in a pan over low heat
now we start adding the noddles and stir with a wood spoon constantly until the noodles are brown, then add the garlic and stir fry them for 1 minute.
Then add the tomatoe, the stock and sprinkle salt and bring to boil on high heat, then add the prawns.
When noodles start to absorbs the liquid stop stirring and is done!

Hey hey hey, now the crispy fish...

mix all the spices and the peanut in a bowl, dip the fish into the mixture and roll it.
fry them in a hot pan, and that's all.
roll it...
serve all togheter

The Helena's Fisksoppa med persika (fish soup with peach)


Some of you maybe wonder how is possible to combine peach with fish together in a soup, well this sweden recipe is the best example of this. Helenas's fish soup is now on the top of my favorites soups, the peach flavor is different, and complement with the other ingredients, is not a sweet taste is, is, is undescriptible :)

So this is the translation for you and me of course :)

Fish Soup with Peach /Fisksoppa med persika
For 6 people

1 onion peeled and cut
2 garlic cloves minced
2 tsp curry
400 g tomatoe cut in small cubes
1/2 fish stock
1/2 vegetable stock
4 dl water
400 g peach peeled or can peach
1 1/2 cooking cream
500 g fish (like hake fish)
200 g shrimps
salt

- Stir fry the onions and garlics.
- Add curry, tomatoes, chicken and vegetables stock and water
- Boil 10 min
- Cut the peaches and add them together with the cream.
- Boil another 10 min.
- Cut fish and add. Simmer for 4-5 min.
- Add the shrimps right before serving.

And decorate with candles on the table :)
